Bi Lo Chun

Taiwan

The name means green spring leech and, with a little imagination, you can see the tea as just that. The carefully selected white-haired buds are picked when they are still short; they are rolled by hand into their beautiful twisted shape, and seem to be dancing downwards in the glass after you pour in the water. The tea is bright and clear yellow, and very well-balanced. Fresh, grassy aromas are complemented by a hearty round sweetness, a touch of bitterness, and a long, almost buttery final taste.
