Gunpowder (or Zhu Cha) is one of the world’s most famous teas, since it has so successfully spread to both the West and the Middle East. The English name is derived from the shape and colour of the small, dark, grey-green rolled balls that were thought to resemble the gunpowder used in 18th century cannons. The tea flavour develops into something round and mellow, slightly sweet with a touch of smokiness. There is some bitterness, which is usually released during the first minute of steeping. Some think it tastes best if you pour out the water after 1/2 minute and then brew it again, but tastes differ.
