This is by far the most famous of Oolong teas, and one of the world’s most famous teas in general. The reason for its fame may well be that it is so easy to like. It is one of the best balanced teas that can be found. Light, berry-imbued, floral aromas balanced by a round, mellow, slightly nut-like, roasted after-taste. The tea bears the imprint of the kneading technique by which it is characterized. The dried leaves are wrapped in cloth and massaged until they obtain a somewhat raisin-like form in which the flavours are encapsulated. This means that the leaves not only stay fresh longer (and are suitable for storage), but also that it may take several infusions before they unfold properly into a golden yellow beverage.
